One of my favorite weekend breakfast pleasures is a bowl of warm oatmeal, full of toasted nuts, seeds, and fruit. It’s a small but meaningful ritual, spending time making a nourishing meal that might otherwise be rushed during the week. This bruised banana oatmeal is just that, a slow, delicious moment. Taking time to toast the oats, stirring as the mixture thickens, and enjoying each bite. It’s a perfect breakfast for these cold, rainy Portland mornings. And it tastes just as great during a busy week. Oatmeal is quick to whip up and packs up nicely if you want to take it on the go. Is there anything oatmeal can’t do? Bananas are one of the most wasted produce items! Once they turn brown, folx tend to toss them. Well, binned bananas no more! This recipe uses up the overripe banana you have sitting out on the counter, looking forlorn. Banana bread is always on call but maybe we want a different vegan delight–a naturally sweetened, filling, and good for you breakfast bowl. Heck, ya may even leave your bananas out just for this bruised banana oatmeal. The fruit cooks down with the oats, injecting that sweet brown banana flavor, brought out by a bit of cinnamon and those toasted nuts and seeds. Less food waste, more great breakfast options. You can add in your 5 minute, package-free hemp milk to keep everything in the loop. Honestly, it might be your go-to breakfast from here on out. Simple, naturally sweet, and hearty. Oatmeal, thank you for all that you do.

A warm, vegan breakfast bowl of oatmeal filled with toasted nuts, seeds, and any overripe bananas you have around. Naturally sweet and delicious this might just become your go-to morning meal.

Bruised Banana Oatmeal

Ingredients

  • 1/2 cup rolled oats
  • 1/4 cup chopped almonds (feel free to use whatever nuts you have here)
  • 1 tbsp hemp seeds
  • 1/2 cup water
  • 1/2 cup hemp milk (or any milk of choice)
  • 1/8 tsp salt ((aka a pinch))
  • 1/2 tsp cinnamon
  • 1 overripe banana
  • 1 tbsp maple syrup (optional, for added sweetness)

To-Do's

  1. Warm up pot on medium and add oats and almonds. Toast for 2-3 minutes, until fragrant. Add hemp seeds, stir together.
  2. Add water, hemp milk, salt, and cinnamon and stir. Bring to a boil. Add banana and use a fork to mash well into the mixture, stir again.
  3. Once boiled, turn down to low and let cook for 6-7 minutes, stirring occasionally until mixture has a porridge like texture. Add maple syrup if desired.
  4. Enjoy! Best when warm and served with a splash of cold hemp milk and extra nuts, seeds, and fruit to top. You can make this the night ahead and save in the fridge to reheat. Keeps well about 2 – 3 days.

  1. I saw your post last night with recipe, and was inspired to put that brown banana in my fruit bowl to use this morning! Ive never thought to mash it into my oatmeal, boy oh boy was it delicious! I used 1C almond milk instead of 1/2C water and it was great! Thanks for sharing!
