When you need an extra umami kick, there is no better flavor enhancer than mushrooms. The fun guys of the culinary world, mushrooms are incredibly versatile ingredients, offering an array of woodsy taste and taking on seasoning to your liking. Shiitakes are one of my favorite add-ins for any plant-based dish. These smokey, savory baked mushrooms are SUPER flavorful, bringing a rich and well rounded salty note to salads, stir fries, and our favorite charcuterie board.

These are an easy side dish that compliments most meals. The mix-in you didn’t know was missing. Show off your kitchen chops by switching up your seasonings with your favorite pairings. These smokey, savory baked mushrooms are SUPER flavorful, bringing a rich and well rounded salty note to salads, stir fries, and our favorite charcuterie board.

Ingredients

  • 2 cups sliced shiitake mushroom caps
  • 1 tbsp tamari
  • 1 tbsp toasted sesame oil
  • 1 tbsp maple syrup
  • 1/2 tsp smoked paprika
  • 1/4 tsp cayenne pepper (optional)
  • freshly ground black pepper to taste

To-Do's

  1. Preheat oven to 350°F and line a baking sheet with parchment paper or a reusable silicone baking mat.
  2. In a large bowl, combine all ingredients, mix until mushrooms are evenly coated.
  3. Distribute mushrooms in an even layer onto baking sheet and bake for 15-20 minutes on each side or until crispy. Keep an eye on them to prevent burning.
  4. Remove from oven and lift parchment paper onto a wire rack to cool completely.
  5. Enjoy from the jar, on salads, sandwiches, soups, etc! Best enjoyed straight from the jar, on salads, sandwiches, soups, etc. within a day of baking.
