Caffeine-free date seed “coffee”

Zero waste experimenting has led me to the magic of roasted date seeds! Edible, nutritious, and aromatic, date seeds are almost never repurposed. Packed with fiber, once roasted and round, you can prepare like regular coffee. If you’ve made DIY plant milk (like this homemade oat milk) or this pecan date cardamom bark there’s good news for those extra pits! Save your leftover seeds in an airtight container in the freezer until you have enough to use and make the most of this unique ingredient.

When roasted, date seeds have a similar, albeit sweeter, flavor profile to coffee beans. (Coffee folks, don’t come for me.) But without the caffeine! A green tea / matcha girl myself, I’m interested in the ritual of coffee and as prices for imported beans rise, we can all find some comfort in alternative offerings. Date seed “coffee” offers a rich sip and can act as a decaf variation of your morning joe. Try cutting your regular coffee with half date seed roast for a half-caf blend to reduce the jitters! Or just enjoy with a bit of sweetener and plant milk for a warm cozy comfort whenever the mood strikes.

Ingredients

To-Do's

  1. Preheat oven to 400 degrees.
  2. In a bowl of water rinse and clean date seeds, removing any excess fruit or debris. Pat dry.
  3. Place date seeds on a baking sheet. Oven oven is hot, roast seeds for 25 – 30 minutes, until dark. Remove from oven, let cool 4 – 5 minutes.
  4. Using a coffee grinder, pour in dates. Grind until powdered. Empty powder into airtight container until ready to use.
  5. For French press–add 2 – 3 tbsp of date seed “coffee” to press. Add in cinnamon. Slowly add boiling water, pausing 2 – 3 times to let “coffee” bloom. Let sit 3 – 4 minutes. Press and enjoy with added plant milk (almond, oat, hemp.)
  6. Powder keeps well in the refrigerator for approx 2 weeks, 1 month in the freezer.
