I love including lentils with this epic leek + lentil whole wheat pasta with rosemary oil dish. You can also add to your next use-it-up Buddha bowl instead of tofu. Or even try making a lentil hummus! The mighty lentil is a versatile, nutritious necessity for your plant-based pantry. WIth a touch of baking soda, you can make this legume easier to digest, without being mushy, and whip up a batch to have on hand. Vegan or not, this easy to prepare dish is a worthwhile addition to your cooking rotation.

Ingredients

  • 1 cup dried brown lentils
  • 2 cups water
  • 1/4 tsp baking soda
  • 1 tsp kosher salt
  • 2 tsp cumin powder
  • 2 bay leaves

To-Do's

  1. Wash and rinse lentils. Remove any excess debris if needed. (Small rocks, etc.)
  2. In a medium sized pan, add lentils, water, baking soda, kosher salt, cumin, and bay leaves. Stir to combine.
  3. Bring mixture to a boil and reduce heat to low.
  4. Cover and let simmer 20 minutes, stirring occasionally ( 2 – 3 times) to ensure lentils are fully covered and not sticking to the bottom of the pan.
  5. Remove from heat. Let cool 2 – 3 minutes and enjoy! Keeps well in an airtight container in the fridge about 1 week.

Notes

This recipe should work well for dried black lentils as well.

For red lentils, avoid pre-wash / rinse and cook for 9 – 11 minutes.
