Vegan caramel

With just 4 ingredients it’s simple to whip up on a moment’s notice for your next holiday gathering. (Or any time of year, let’s be honest here.) The secret to this recipe is time in the refrigerator to thicken up the consistency.

Ingredients

  • 1 cup coconut cream
  • 3/4 cup brown sugar I used dark brown sugar
  • 1/4 tsp kosher salt
  • 1/4 tsp vanilla

To-Do's

  1. Turn heat on medium-high. In a medium saucepan add all ingredients. 
  2. Let mixture come to a frothy boil, stirring continuously. Keep stirring about 5 minutes.
  3. Reduce heat to low simmer for additional 10 minutes, still stirring continuously.
  4. Remove from heat, let cool 1 – 2 minutes.
  5. Pour mixture into glass jar and place in fridge to thicken for 1 – 2 hours (or even overnight.)
  6. Before use, stir to mix well. Consistency should be much thicker and stick to your spoon.
  7. Top any number of drinks, dessert or other and enjoy! This should keep well in the fridge about 1.5 – 2 weeks.
