Caramel apple pops

Halloween nostalgia inspired treats with fresh, tart green apples, smooth dark chocolate, and vegan caramel! A level up from the bright green caramel pops of my youth (I may still indulge here and there, you too?) These are a kid-friendly fun way to get into the season and spirt of things. With customizable decorations this is a favorite recipe for the whole family.

We love a vegan holiday treat (and you can enjoy this all season long!) With homemade plant-based caramel and naturally sweet apples these DIY pops are the perfect flavor and texture combo. The secret to the perfect slice is making sure your apples are thick enough and pat dry.

Try mixing up your toppings with your favorite holiday candies, chopped nuts, spooky sprinkles, or whatever else inspires you!

Ingredients

  • 4 - 5 green apples, smaller sized
  • 8 - 10 popsicle sticks
  • paper towel or clean dry cloth

Chocolate dipping sauce

  • 1 cup dark chocolate chips
  • 2 tsp coconut oil

Toppings

  • 1/2 cup vegan caramel
  • sprinkles
  • holiday candy
  • chopped nuts (I used pecans)

To-Do's

  1. In a double boiler, boil water on medium low and add chocolate and coconut oil to top bowl. Stir until melted, fully combined and smooth. Turn off heat. (You can also melt in microwave, approx 30 seconds – 1 minute+, stirring as you go.)
  2. To prepare apples, slice vertically, removing approx 1/4” off each side. (We want flat pieces.) Slice 3/4” approx slices from each side of the apple. You may be able to get 1 – 2 more slices from your fruit, depending on the size of your apple. Carefully remove any seeds. Horizontally slice off the very bottom off your apple slice to add in the popsicle stick.
  3. Reserve any leftover apple pieces for making applesauce, apple chai cider, vinegar, or other inspired treat.
  4. Take your popsicle stick and gently push into the middle bottom of your apple slice. It’s ok if it’s not perfect but aim for flat! Pat dry the apple on both sides.
  5. Line a baking sheet with parchment paper. Set aside.
  6. Stir your melted chocolate and begin decorating your apple pops! Dip your first apple slice into the chocolate, evenly coating all sides. Place your pop flat on the prepared baking sheet.
  7. Add toppings of choice–candy, sprinkles, chopped nuts, and top with drizzled caramel to your liking.
  8. Repeat with remaining pops. Once finished place in the fridge to set for 1 – 2 hours.
  9. Enjoy! These keep about 1 – 2 days in the fridge but best eaten day of.
