Ingredients

  • 4 cups apples, approx, roughly chopped, about 10 - 12 apples (you can leave the peels on)
  • 1/4 tsp kosher salt
  • 1 1/2 tsp cinnamon
  • 1/4 of a whole lemon

To-Do's

  1. Wash and roughly chop and core apples, adding to a large bowl. You can save cores to make apple scrap vinegar.
  2. In a large pot, drop in apples and turn heat to medium-high. Cover with a tight fitting lid.
  3. Leave apples to heat for 2-3 minutes. Remove lid and stir.
  4. Repeat for approx 10-15, stirring ever 2-3 minutes, until apples start to tenderize. 
  5. Add in kosher salt, cinnamon, and squeeze in the lemon juice (make sure to catch any seeds.)
  6. Stir until combined. Let sit for another 2-3 minutes covered and check for doneness. Apples should smash easily under a fork.
  7. Once tender, turn off heat and using an immersion blender or potato masher, blend the mixture until mostly smooth. I like to leave a few larger pieces for texture but blend to your preference.
  8. Top with a dash of cinnamon and enjoy!
  9. This keeps well in the refrigerator for about a week and a half.
