From adding in homemade veggie sausage to spreading with savory or sweet leaning additions, you really can’t go wrong with a bagel sandwich.

(My personal fav is always hummus and a pickle of some kind!) With a list of tried and true bagel-spiration you can let me know where you land and what makes it into the regular rotation. Ingredients

To prepare your bagel

  • 1 sourdough discard bagel
  • Toast your bagel either in a toaster or heat a tablespoon of olive oil in a skillet. Once hot, drop in your bagel and let toast for 3 – 4 minutes. Remove from heat and plate. If using a regular toaster, butter bagel as desired.

 

The breakfast bagel

Heat your sausage patty if need and place on bottom bagel slice. Add in heaping portion of vegan white cheddar, top with hot sauce and close the bagel. Enjoy!

 

The kraut me if you can bagel

Thinly slice avocado and place evenly around bottom slice of bagel. Spoon kraut on top of avocado evenly. Sprinkle with Tajin to top and close the bagel. Enjoy!

 

The hummust try this bagel

Spread hummus evenly and generously over bottom slice of bagel. Place quick pickles on top of hummus as desired. Top with a hefty sprinkle of sesame seeds. Close the bagel. Enjoy!

 

The nut butter bananarama bagel

  • 2 – 3 tbsp nut butter (peanut butter, sunflower seed butter)
  • ½ ripe banana (overly ripe is great)
  • 2 pitted dates
  • 4 – 5 pecans

Roughly chop dates and pecans. Spread nut butter over both bagel slices (best served open face.) Slice banana and place evenly around the bagel. Sprinkle both halves with pecans and dates. Enjoy!
