Cinnamon glazed apple scones

Maple syrup sweetened with whole wheat flour and packed with apple-y goodness–they are a can’t-miss cold weather treat (or any time apples are in season!) Studded with soft baked tender apples and homemade applesauce, you can totally eat these scones to keep the doctor at bay.

These tasty pastry triangles are a favorite of mine, easy to prepare, and beginner-baker friendly. The key to this recipe is keeping your butter cold and flouring your surface to keep the dough from sticking. Once you get the hang of these scones you’ll be making this recipe on a weekend basis, trust me. And, this 20 minute bake is a great way to make the most of your plant-based pantry–you can whip everything up in under 30 minutes. Cinnamon spiced, these pair well with a cold glass of oat milk, and well, a second scone. Enjoy!

Ingredients

  • 1 flax egg (1 tbsp ground flax meal + 2 tbsp water, whisk with a fork and let sit 5 minutes)
  • 1 tsp apple cider vinegar
  • 1/3 cup plant milk
  • 1 cup all purpose flour
  • 1 cup whole wheat flour
  • 1 1/2 tsp baking powder
  • 1/4 tsp baking soda
  • 1/2 tsp kosher salt
  • 1 tsp cinnamon
  • 1/4 cup maple syrup
  • 1/2 tsp vanilla
  • 1/4 cup applesauce
  • 1/3 cup cold vegan butter (I used Earth Balance)
  • 1 cup finely chopped apples (about ½ of one medium apple)

Cinnamon glaze

  • 1/2 cup powdered sugar
  • 1/4 tsp cinnamon
  • 1 tbsp plant milk

To-Do's

  1. In a small bowl, make flax egg–whisk flax meal and water together and let sit.
  2. In another small bowl, make vegan buttermilk by combing apple cider vinegar and plant milk and whisking. Let sit.
  3. In a large bowl, sift both flours, baking powder, and baking soda. Add in salt, cinnamon, maple syrup, vanilla, and applesauce. Mix ingredients until just combined. (Don’t overmix here.)
  4. Cube butter into approx ¼” – ½” pieces and add to bowl. Using a fork or pastry cutter, mash the butter into the mixture until combined. There will be some pieces of butter throughout the mixture.
  5. Add in apple pieces. Using clean hands, fold the dough over onto itself to continue mixing quickly until apple pieces are incorporated. Avoid over folding as the heat from your hands will warm the butter.
  6. Preheat your oven to 375. Line a baking sheet with parchment paper or a silicone baking mat. Set aside.
  7. On a clean surface, sprinkle flour. Scrape your dough out of the bowl, roughly into a sphere, and place onto the floured area. Use your hands to gently flatten the dough into a circular shape, approx 1” – 1 ½” tall. You can sprinkle the top of your dough with extra flour to avoid sticking, as needed.
  8. Use a knife or bench scraper to cut lengthwise, widthwise, and then diagonal to create 8 equal (enough) pieces.
  9. Using the tip of your knife to scrape between the bottom of one of the wedges and the table, carefully move the first pastry triangle to the prepared baking sheet.
  10. Repeat with remaining wedges, leaving about 2 inches of space around each piece.
  11. Once oven is hot, bake for 21-22 minutes, edges should be just golden brown.
  12. While scones are baking, make glaze by sifting powdered sugar and cinnamon into a small bowl together. Add in plant milk and whisk until smooth. (Sifting ensure no clumps in your glaze!)
  13. Remove scones from oven and let cool 10 minutes.
  14. Whisk glaze again and spoon lines across each scone as desired. For full coverage across each scone, double your glaze batch. Let set for approx 20 minutes.
  15. Enjoy! These scones last about 2 – 3 days in an airtight container on the counter.
